Нескромный вопрос: Squid пишет куда нибудь дату и время запроса, например в access.log?

Все есть в access.log
 1) Timestamp                                                                                 
        The time when the client socket is closed.  The format is "Unix                       
        time" (seconds since Jan 1, 1970) with millisecond resolution.                        
 2) Elapsed Time                                                                              
        The elapsed time of the request, in milliseconds.  This is time                       
        time between the accept() and close() of the client socket.                           

постась emulate_httpd_log on в конфиге и время будет в "нормальном" формате

только не забудь, что этот "нормальный формат" повлечет за собой уменьшение количества доступных полей... хотя в некоторых случаях удобней emulate_httpd_log on ставить
