Наверное не понятно задан вопрос? =) Ну тоесть как указать mail smtp-сервер, через который нужно отправлять почту?

mail не отправляет почту через smtp, а отдает локальному MTA. То бишь просто запускает sendmail и отдает ему на stdin. (Или я ошибаюсь?)

Настраивай sendmail.
